Missing Folders
There are some folders that either are missing or empty, not transferred over during the migration, including Private folders, Hidden folders, and Encrypted folders.

Meetings being transferred over as Appointments
Calendar entries, such as meetings, are coming over as Appointments with no information on the attendees.

Contacts taken from the Global contacts list
Taking a contact from the Global contacts list into the Personal contacts list puts "/FSU" at the end of the name, which causes scheduling issues.

Problem with scheduling meetings for someone else
If someone other than the calendar owner scheduled a meeting, that other person was scheduled in the meeting, not the owner of the calendar.

When I launched Outlook for the first time, I had a bunch of calendar reminders go off.

Contacts being changed after migration
Some people had a 0 (zero) put on the end of most of their contacts.

Losing the first name of contacts
Some people had the first name dropped off of their contacts. They were still in the contacts, listed under either their middle initial or just their last name.
